Super Seed Wake-Up Coffee Balls

Start the day with the right type of caffeine. These super seed coffee balls are the perfect morning energy balls, made using decaf coffee and coated in super seeds – healthy bites bursting with energy.

Note: these super seed coffee balls are super quick to prep, but setting time in the fridge is 1 hour.

If you’re a vegan or transiting to veganism, nuts & seeds are a big ally! They’re great as a source of:

  • protein
  • good fats
  • plant sterols
  • minerals (potassium, calcium, iron, magnesium & zinc in particular)
  • vitamins (E, B’s)

Hemp seeds and pumpkin seeds top the seeds protein charts with 31.6G and 28.8g of protein per 100g of seeds respectively (source: UK.Veganuary.com).

Nuts are also a great source of fibre and plant sterols have been shown to reduce cholesterol re-absorption from the gut. So there are a great range of health benefits when it comes to seeds and nuts.

Ingredients
 2 tbsp heaving almond pulp (sieved from my homemade almond milk )Alternatively use almond flour
 130 g pre-soaked pitted medjool dates (circa 12 dates)
 2 tbsp organic instant coffee (I used decaf)
 2 tbsp organic sugar free cocoa nibs
 2 tbsp coconut flakes
 2 tbsp coconut sugar
 2 tbsp chia seeds
 2 tbsp virgin coconut oil
 toasted super seed mix: toasted brown linseeds, toasted pumpkin seeds, toasted sunflower seeds (from Wholefoods)

Method
1

Blend all the ingredients in a NutriBullet apart from the superseeds

Mould your blended mix into balls

Roll the balls in super seeds, coating the entire surface

4

Store in an airtight container in the fridge for up to 2 weeks
