Perfect for parties, BBQs, or guilt-free snacking, this vibrant, high-protein dish is quick to prep, easy to customize (hello, tofu or jackfruit!), and guaranteed to wow your guests. Ready in jut a few minutes, it’s a bite-sized explosion of Indian flavor you’ll keep coming back to.

Ingredients:
For the Marinade:
  cup yogurt (plain, full-fat or dairy-free if needed)
 2 tbsp tandoori masala
 1 tsp cumin powder
 ½ tbsp red chili powder (adjust to taste)
 ½ tsp paneer tikka masala (or substitute with chaat masala, chana masala, or pav bhaji masala)
 1 tbsp minced garlic
 1 tsp salt
 1 tbsp oil (rapeseed or any neutral oil)
For the Bites:
 250 g paneer, cut into bite-sized cubes (or use halloumi, tofu, seitan, tempeh, or jackfruit for alternatives)
 fresh spinach or baby spinach leaves (for serving base)
 1 cucumber, thinly sliced lengthwise into ribbons
 Black sesame seeds (for garnish)
 Toothpicks or skewers

Method:

Prepare the marinade. In a large bowl, mix yogurt, tandoori masala, cumin powder, red chili powder, paneer tikka masala, minced garlic, salt, and oil until smooth.

Marinate the paneer. Add the paneer cubes (or your chosen protein/veg) to the marinade. Toss gently to coat all sides.

Cover and refrigerate for at least 30 minutes (or up to 2 hours) for maximum flavor.

Cook the paneer. 

  • Grill method: Preheat a grill or grill pan on medium-high. Grill marinated paneer pieces for 2–3 minutes per side until lightly charred.
  • Oven method: Preheat oven to 220°C (425°F). Arrange marinated paneer cubes on a lined baking tray and bake for 12–15 minutes, turning once, until golden.

Assemble the bites. Place fresh spinach leaves/choice of your leaf on a serving platter. Top each leaf with a grilled paneer cube.

Add a cucumber slice on top and sprinkle with black sesame seeds.

Finish with toothpicks. Secure each bite with a toothpick. Serve immediately while warm or at room temperature.
