Sauté the chopped onions and garlic in the olive oil over medium heat for about a minute until fragrant.
Add the chopped carrots and celery & stir in for a few seconds.
Boil the water in a kettle and dissolve the 3 stock cubes.
Pour in the tomato purée and stock water, stirring well.
Add the tortellini and bring to a boil (this usually takes about 12-13 minutes). Halfway through, stir in the frozen peas.
Add the chopped kale, Parmesan, and heavy cream, turning off the heat and mix everything.
Serve hot and enjoy the warmth and goodness!
