Vegan Cauliflower Tofu Skewers

These Vegan Cauliflower Tofu Skewers made with tofu, cauliflower and peppers are essential for your BBQs! These skewers pair perfectly with my infamous Green-Nut Butter Sauce for a flavourful BBQ snack. For this recipe I used smooth peanut butter for my sauce rather than a chunky one, to give it a runnier consistency. I also added double the water as I wanted to drizzle it over my skewers after grilled.

This recipe for Vegan Cauliflower Tofu skewers is a 15 minute recipe if you have your sauce ready for use in the fridge, otherwise add another 2 minutes if you’re making the sauce from scratch!

Ingredients
 280 g tofu
 400 g cauliflower head
 1 small red pepper
 1 small green pepper
 coriander

Method
1

Chop your tofu, cauliflower & peppers. Place into a mixing bowl

Add 3/4 cup of 15min mom green-nut butter sauce

Mix thoroughly

Place your pieces of tofu, cauliflower and pepper through skewers

Place skewers on a tray

Leave for 10-12 mins on grill. Make sure you soak or wet your wooden skewers before you place them under the oven grill because they can catch fire or burn

Add remaining 1/4 cup green-nut butter sauce over top of skewers

8

Sprinkle some coriander
