Vegan Chia-Berry Coconut Jelly

A cool and refreshing vegan jelly that’s fridge cold – great for cooling down on those warm days. Healthy and super delicious, this Vegan Chia-Berry Coconut Jelly is a perfect treat for all.

For the tastiest vegan jellies, I used Alpro coconut milk, vegan agar flakes from Clearspring and chia seeds from The Chia Co. Sweeten your jelly with some vanilla essence and agave nectar and then pour into bowls and let cool in the fridge.

For my berries and fruits, I added raspberries, blueberries, blackberries and kiwi but you can use any of your favourite berries. These fruits add so much flavour, as well as nutritional benefits, to this Vegan Chia-Berry Coconut Jelly dessert.

Ingredients
 250 ml preferred coconut milk (I used Alpro)
 favourite berries (I used raspberries, blueberries, blackberries and kiwi berries)
 1 tbsp agar flakes or vegan gelatine leaves (I got mine from Clearspring)
 1 tbsp chia seeds (I used The Chia Co.)
 1 tsp vanilla essence
 1-2 tbsp agave nectar or your favourite sweetener (I used The Groovy Food Company)

Method
1

Heat your preferred coconut milk on low heat (do not let it boil)

Chop up your favourite berries - I used raspberries, blueberries, blackberries and kiwi berries

Place the berries in little bowls

Without letting the milk boil, add 1 tbsp agar flakes or vegan gelatine leaves to the milk

Add your chia seeds

Add 1 tspn vanilla essence

Add 1-2 tbsp of agave nectar or your favourite sweetener, depending on how sweet you want it

Let the milk cool down for 2 mins and pour onto the fruit bowls

9

Chill in the fridge to solidify takes the same time as normal jelly
