This nourishing vegan gut health broth is light, healing, and packed with flavour. Infused with miso, warming turmeric, and fragrant aromatics like lemongrass and galangal, it’s designed to support digestion while delivering a comforting, nutrient-rich bowl for all ages. Loaded with fibre-rich vegetables and umami depth, it’s the perfect reset meal when your body needs something gentle yet satisfying. Save this for your next feel-good meal.

Vegan Gut Health Broth for All Ages is light, healing, and packed with flavour - A bowl your gut will thank you for.

Ingredients:
 1 tbsp Miso paste
 1 tbsp Soy sauce or tamari
 1 tbsp Chili oil (to taste)
 a pinch of salt (adjust after miso)
 a few cracks of black pepper
 ¼ tsp Turmeric
Aromatics:
 2 cloves, smashed garlic
 ½ small shallot or onion, sliced
 1 stalk green onion (white part for broth, green for garnish)
 4 thin slices of galangal
 1 small stalk lemon grass, smashed and cut into 3 pieces
 8 Coriander stems (save leaves for garnish)
Vegetables:
 ½ cup Shimeji mushrooms
 2 Shiitake mushrooms, sliced
 ¼ small courgette, sliced
 5 small broccoli florets
 ¼ cup Red/yellow peppers, sliced
 1 handful Baby spinach (added at the end)
 Optional protein boosters: silken tofu cut in small cubes, tempeh, animal proteins, seafood

Method:

Sauté aromatics. Heat a splash of oil in a pot.

Add garlic, shallot/onion, coriander stems, galangal, and lemongrass. Sauté for 2–3 minutes until fragrant.

Build the broth. Add water along with soy/tamari, miso, turmeric, and black pepper. Stir well and bring to a gentle simmer. Cook for about 5 minutes to allow the flavors to infuse.

Add mushrooms and cook for 3 minutes.

Add broccoli, courgette, and peppers, and cook for another 3–4 minutes.

Add baby spinach in the last 20 seconds until just wilted.

Taste and adjust seasoning with salt or extra soy if needed.

Top with green onions, fresh coriander leaves, and a drizzle of chili oil before serving.

Finish & serve and enjoy.
