Watermelon Cooler Mock or Cocktail

This simple Watermelon Cooler Mock or Cocktail is a super quick recipe for wonderfully cool and refreshing drinks. This watermelon and mint juice isn’t sweet at all, but you can adapt it for those with a sweet tooth by adding coconut water (a healthier alternative to sugar).

To make yourself a cocktail, simply add a shot of gin or vodka.

A Little on Watermelon

There’s a good reason why watermelon becomes such a popular food during the summer months. As it starts to get hotter and hotter, the need to stay hydrated becomes ever more imperative and we find ourselves reaching for colder foods, drinks and deserts. In particular, watermelon is perfect for warmer weather as it’s extremely hydrating (consisting mainly of water) and full of vitamin C! Blended into a juice with water and ice, using a NutriBullet or juicer, a drink of this Watermelon Cooler Mock or Cocktail is a great and delicious way to stay cool and refreshed.

Ingredients
 3 cups chopped watermelon
 ½ cup water
 squeeze of lemon or lime
 1 cup ice
 6 mint leaves

Method
1

Roughly cut your watermelon into chunks

Remove the seeds from the watermelon

3

Throw your chopped watermelon chunks into a NutriBullet (or juicer)

Add your water

5

Squeeze in a bit of your lemon or lime

6

Add your ice to make your drink even more refreshing and cool

7

Blitz everything well to make your juice

8

Add some chopped mint leaves to infuse in the juice & leave to cool in the fridge
