Ingredients
  cup Extra Virgin Olive Oil (EVOO)
 3 sun-dried tomatoes
 small handful fresh parsley
 small handful fresh basil
 garlic cloves
 ½ tsp chilli flakes
  cup balsamic vinegar
 Rock salt, to taste
 Bread to serve – I used sourdough

Method

Finely chop the sun-dried tomatoes, parsley, basil, and garlic.

 Pour in the EVOO and balsamic vinegar. Stir gently to combine.

Sprinkle with rock salt to taste.

 Pour into a shallow bowl and dip warm, crusty sourdough or your favorite bread. Best enjoyed fresh.
