Ingredients
1 ½ cups (210 g) oat flour (you can also use whole wheat or all-purpose flour)
1 large brown banana or 2 tbsp coconut sugar
2 tsp baking powder
1 ½ cups (338 ml) unsweeted almond milk (from Alpro)
3 tbsp coconut oil
2 cups spinach leaves
pinch of salt
optional: fried or poached egg
Method
1Heat up your waffle maker
2Blitz all ingredients in a NutriBullet (don’t over blitz)
3Grease your waffle maker plates with coconut oil
4Pour out some batter and let cook until brown
5You can place the waffles in the oven to keep warm (100C)
6Optional: fry an egg or poach an egg to eat with your waffles
