1 ½ cups (210 g) oat flour (you can also use whole wheat or all-purpose flour)
1 large brown banana or 2 tbsp coconut sugar
2 tsp baking powder
1 ½ cups (338 ml) unsweeted almond milk (from Alpro)
3 tbsp coconut oil
2 cups spinach leaves
pinch of salt
optional: fried or poached egg

Heat up your waffle maker

Blitz all ingredients in a NutriBullet (don’t over blitz)

Grease your waffle maker plates with coconut oil

Pour out some batter and let cook until brown

You can place the waffles in the oven to keep warm (100C)

Optional: fry an egg or poach an egg to eat with your waffles
