High in protein and fiber, low in carbs, and completely vegan, this dish checks all the boxes for a healthy, satisfying meal. Let’s dive into this delicious tofu stir-fry with a flavorful peanut satay sauce!

Cut 1 block of tofu into cubes and toss the cubes in 1 tablespoon of corn flour and season with salt and pepper.
Sauté the tofu in sesame oil along with chopped red onions and minced garlic until golden and crispy
Add the spiralized courgette to the same pan with the tofu. Mix everything together and sauté for an additional 2 minutes.
In a bowl, mix minced garlic, ginger, black sesame seeds, white sesame seeds, and chili flakes
Heat 2 tablespoons of extra virgin olive oil in a small pan and pour the hot oil over the mixture in the bowl
Add agave or your preferred sweetener, chunky peanut butter, and soy sauce and mix well.
Pour the peanut satay sauce over the tofu and courgette mixture in the pan.
Mix thoroughly to coat everything in the sauce.Serve hot and enjoy!
