Mix blended tofu with 170g of gram flour, nutritional yeast, onion granules, and a pinch of salt in a bowl.
Mix well until you have a uniform dough.
Gradually add the additional 1/2 cup of gram flour to the dough.
Knead it gently until it becomes smooth and slightly elastic.
Divide the dough into smaller sections for easier handling.
Roll each section into a long rope, about 1/2 inch thick. Cut the rope into small pieces (about 1 inch long).
Bring a large pot of salted water to a boil and add a splash of olive oil.
Carefully drop the gnocchi into the boiling water.
Cook until they float to the surface, which should take about 2-3 minutes.
Once they float, let them cook for an additional minute.
Using a slotted spoon, remove the gnocchi and let them drain.
Serve the gnocchi warm, topped with your choice of ready-made sauce.
