Ingredients
 1 handful organic spinach
 4 eggs
 mozzarella balls
 Himalayan salt, black pepper & chilli flakes to taste
 preferred oil (I used coconut oil) to grease the pan

Method
1

Blitz in a NutriBullet – except the mozzarella balls and chilli flakes

Coat an egg poaching pan with some oil – I used coconut oil

Pour the spinach egg mixture into the compartments

Steam for 5-7mins

Place the mozzarella balls on top and sprinkle chilli flakes (optional)

Serve hot! Store in fridge for up to 2 days as a perfect snack
