Made with only four key ingredients (organic spinach, eggs, mozzarella balls and seasoning), this is a quick, hassle-free and healthy way to kickstart your day. Blitz in a NutriBullet – except the mozzarella balls and chilli flakes
Coat an egg poaching pan with some oil – I used coconut oil
Pour the spinach egg mixture into the compartments
Steam for 5-7mins
Place the mozzarella balls on top and sprinkle chilli flakes (optional)
Serve hot! Store in fridge for up to 2 days as a perfect snack
