These Scrambled Paneer Frankies with Parathas, also known as a paneer bhurji kathi rolls, are an excellent way to start your breakfast. High in protein and calcium, these parathas are great for the whole family! Made with a rich variety of spices, including cumin powder, turmeric powder, red chilli powder and garam masala, these savoury pancakes are bursting with flavour, proving that breakfast doesn’t have to be bland.

A Little on Paneer…
For those who might be asking themselves ‘what is paneer?’, paneer is an Indian cottage cheese that’s high in protein and calcium so it’s a great dairy option for both children and adults. It’s a versatile cheese that can be used in all sorts of dishes; I’ve used paneer not only for breakfast recipes, but for main meals too, like my low carb Lettuce Enchiladas with Black Bean & Fresh Paneer Filling and my Green Paneer. Combined with all the spices, garnished with a sprinkling of coriander and served on parathas (Indian flatbread), these Scrambled Paneer Frankies with Parathas offer a taste of India from your own kitchen.

Heat the oil or ghee in a pan and add cumin seeds and asafoetida
When they start to crackle, shortly after add onions, ginger and garlic and fry to brown (all 3 can be chopped in a chopper together)
Chop up your tomatoes, peppers and crumble your paneer
The onions will have browned by now so add your tomatoes and green chilli
Mix and add all your spices cook for 1 - 2 minutes
Add your paneer and lemon juice
Cook for 2-3 minutes then garnish with coriander and serve in parathas to make your frankie rolls
